Olivier Beurné
Olivier Beurné is the one-star chef of the restaurant at Château Locguénolé. Working with him has been a great pleasure from a human, gustative (…) and technical point of view. At first sight, what he asked for was quite simple: making three knives. A small knife, a medium-lenght knife and a big kitchen knife. Things began to be much more interesting when I realised Olivier was very demanding. Until then he used highly expensive Japanese knives which he thought were not sharp or ergonomical enough. That was really challenging and I had to make many prototypes and flirt with my technical limits to produce knives to comply with his request. For example, the longest knife has a very exclusive use as its 1mm-thick blade measures 18 cm... And is in blue paper sandwich. If you scowl at it, the blade twists... But if you know how to deal with it its sharpness is exceptional. And Olivier obviously managed to tame it. This exchange has been so beneficial that we have planned to keep on working together. He is an expert at using knives for the tasks which are at the heart of his job and I bring about technical and ergonomical solutions. Let us hope some beautiful knives will be born from this mutual enrichment.
