Of course I like to work with birch bark, tagua nuts, bamboo,  and so on...but by personal conviction I have decided not to make leather sheathes any longer and not to use horns or other products from animal exploitation.
Steels
 
I always choose the steel in relation to the future use of the knife. The steels I like the best are the following: Japanese steel like white paper or blue paper; I really like the 100C6 as well.
I have a preference for composite multi-layers blades and for some light patterned damascus blades.
Of course I mostly use carbon steel, but I'm using some new stainless steels like RWL34, VG10, 14C28...

Woods
 
Wood is my favourite material. For me it's a fundemental element which gives the knife its texture and which makes it warm.
I prefer using European species and the attractive pieces with lots of patterns in them.
I particularly like box wood, heather, curly birch, yew, juniper... And my two favorite woods are probably : Bog Oak and Holly
I  use as natural surface treatments  as possible (oils, wax).
